1/4 cup butter
1/4 cup flour
1 1/2 cups milk
1/2 cup mayo or salad dressing
1/2 tsp salt
2 cups cooked ham, cubed
2 cups cooked rice
1/2 green pepper, chopped
1/2 cup sliced water chestnuts
2-4 Tbsp chopped pimiento
3/4 cup shredded cheddar
Melt butter in a saucepan over low-medium heat.
Whisk in flour and stir constantly for a couple of minutes, then gradually whisk in milk.
Continue cooking until thickened.
Remove from heat and whisk in salad dressing and salt.
Toss in remaining ingredients and pour into a 2 quart casserole dish.
Bake in a 350 degree oven for 30 minutes.
